Spiced Nut and Seed Granola

Makes about 6 cups

3 cups rolled oats

1 cup raw pumpkin seeds, sunflower seeds, or a combination

1 cup raw pecans, almonds, walnuts, cashews, or a combination, coarsely chopped

½ cup sesame seeds

1 cup unsweetened coconut flakes

½ teaspoon sea salt

1 teaspoon cinnamon

½ teaspoon ground ginger

½ teaspoon cardamom

1/3 cup maple syrup*

1/3 cup extra-virgin olive oil

1 teaspoon vanilla extract

½ cup dried fruit (raisins, cranberries, chopped dried mango, goji berries)

1. Preheat oven to 300F. Combine rolled oats, pumpkin seeds, pecans, sesame seeds, coconut flakes, sea salt, cinnamon, ginger, and cardamom in a mixing bowl. Stir in the maple syrup, olive oil, and vanilla. Make sure all dry ingredients are evenly coated.

2. Spread mixture onto two parchment-lined baking sheets and bake for about 30 minutes, stirring every 10 minutes to prevent the edges from burning. Granola is done when golden and fragrant. It will crisp up as it cools.
