Chocolate Walnut Truffles

Makes about 12 truffles

1 cup walnuts, almonds, pecans, Brazil nuts, or a combination

¼ cup cocoa powder

½ teaspoon cinnamon

¼ teaspoon sea salt

10 Medjool dates, pitted

1 teaspoon vanilla extract

Shredded coconut, for rolling

1. Place the nuts, cocoa powder, cinnamon, and salt in a food processor and process into a fine meal.

3. Add the dates and vanilla extract. Process until a ball forms or dough easily sticks together when pressed, 1-2 minutes.

4. Roll into small balls and roll each ball in shredded coconut.

5. Freeze or refrigerate until serving.
