Beet Chips
Makes 4 servings
3 medium beets, rinsed and scrubbed
Extra virgin olive oil
Sea salt
Black pepper
Fresh chopped or dried rosemary (optional)
1. Preheat oven to 350F and line two baking sheets with parchment paper.
2. Thinly slice the beets with a mandolin or sharp knife. You want the slices to be as consistently thing as possible (1/16”). In a large bowl, combine beet slices with oil, a pinch of salt, and the rosemary. Toss to coat evenly. Arrange the beets in a single layer on the baking sheets, making sure the slices aren’t touching.
3. Bake for 15 minutes, flip over chips, and bake for another 10-15 minutes or until crispy and slightly brown. Toss chips with additional sea salt and pepper to taste.
