1 large English cucumber, peeled, deseeded, and grated

1 cup full fat Greek yogurt or plain CocoYo coconut yogurt

1 tablespoon olive oil

1 ½ tablespoons lemon juice

¼ cup chopped fresh dill

1 clove garlic, finely minced

Sea salt

Ground pepper

1.In a medium bowl, combine the cucumber, yogurt, oil, lemon juice, dill, garlic, and salt and pepper to taste. Stir well to combine. Taste and adjust lemon or salt if needed.
