Marinara Mussels



Marinara Mussels


Makes 1 serving

1 pound mussels

1 tablespoon olive oil

2 cloves garlic, minced

1 cup marinara sauce

1/2 cup water

1/4 cup chopped Kalamata olives (optional)

Chopped parsley for garnish (optional)



  1. Rinse mussels and remove any hairs ("beards"). Discard any broken shells or mussels that do not close when pinched.

  2. Heat olive oil over a deep sauce pan or skillet. Add the garlic and sautéed 30 seconds. Add the marinara sauce, water, and olives. Bring to a simmer.

  3. Add the mussels, cover and cook 3 minutes, until the mussels have fully opened. Discard any that do not open.

  4. Serve garnished with chopped parsley.
