Banana Almond Oat Muffins

Makes 10-12 Muffins


3 very ripe, large bananas

3 eggs

2 teaspoons vanilla extract

1 teaspoon ground cinnamon

1/4 teaspoon salt

1 teaspoon baking soda

1/2 teaspoon baking powder

2 cups almond meal

1 cup oat flour (can be made from processing 1 cup rolled oats into a flour)

1/2 cup dark chocolate chips

1/2 cup toasted chopped pecans (optional)

  1. Preheat oven to 350F and line 12 muffin tins with muffin cups or grease tin with butter.

  2. In a food processor, purée bananas until smooth. Add eggs, vanilla extract, ground cinnamon, salt, baking soda, and baking powder. Process until smooth.

  3. Add almond meal and oat flour and pulse until just combined.

  4. Finally, pulse in chocolate chips and pecans.

  5. Divide batter between 10-12 muffin cups and bake for 20-25 minutes.

  6. Serve smeared with butter or jam along with a mug of tea.
