Sunflower Seed Pesto

Sunflower Seed Pesto

Makes about 1 cup

3 cups washed, loosely packed fresh basil (stems removed)

1/3 cup sunflower seeds, toasted

½ teaspoon salt

¼ teaspoon ground black pepper

1 clove garlic

1 tablespoon fresh lemon juice

¼ cup olive oil

1. Combine all the ingredients in a food processor. Process to combine into a smooth sauce, adding additional oil if necessary, to achieve desired consistency. Taste and add additional lemon, salt, or pepper if desired
