Sunbutter-Stuffed Dates with Pomegranates and Chocolate Drizzle

Makes 8+ servings

16 Medjool dates

½ cup Sunbutter

¼ cup pomegranate seeds

3 tablespoons coconut oil

2 tablespoons cacao powder

Sea salt

  1. Slice down the middle of the date and remove pit.

  2. Using a small spoon, stuff date with about 1- 2 teaspoons Sunbutter. Dates should be about ¾ full.

  3. Place 3-4 pomegranate seeds inside each date. Repeat with all dates and place side by side in a parchment-lined storage container in one single layer.

  4. Add coconut oil to a small sauce pan and melt on low. Stir in cacao powder and a small pinch salt. Using a spoon, pour chocolate sauce over the dates. Transfer to fridge to set. Store in fridge for up to 5 days or freezer for several months.
