Coconut Quinoa Porridge


Coconut Quinoa Porridge

Makes 4 Servings

1 cup quinoa, rinsed well, soaked overnight if possible, and rinsed and drained

1 ½ cups water

1 (14-ounce) can full fat coconut milk

1 teaspoon ground cinnamon

¼ teaspoon ground cardamom (optional)

¼ teaspoon salt

¼ - ½ cup ground flax seeds

Fruit of choice

1. Place quinoa, water, coconut milk, cinnamon, cardamom, and salt in a medium-sized pot and bring to a boil. Reduce to a simmer, cover and cook 15 minutes. Remove lid and simmer another 5 minutes, or until porridge reaches desired consistency.

2. For each serving, when ready to eat, stir in 1-2 tablespoons flax seeds and top with fruit of choice.

Note: If new to flax seeds, start with 1 teaspoon and increase by ½ teaspoon each day.
