Chocolate Sunbutter Snack Balls
Makes 8 balls
1 cup pitted Medjool dates (about 8 dates)
1 tablespoon cacao powder
½ cup sunbutter (no sugar)
½ cup shredded, unsweetened coconut
1. Place dates in the bowl of a food processor and process until they form a ball.
2. Add the cacao powder, sunbutter, shredded coconut, and salt, processing again until a ball forms. If the dough is slightly too sticky, add a bit more coconut or you can add ground flax seed.
3. Form mixture into tablespoon-sized balls and refrigerate until ready to enjoy.
