Chocolate Protein Balls

Makes about 24 balls


1 cup walnuts

1/2 cup almond meal

1 cup whey protein powder

1/4 cup cocoa powder

1/2 teaspoon sea salt

1 teaspoon vanilla extract

8 oz medjool dates, pited and soaked in hot water for 15 minutes, excess water squeezed out and saved.

Shredded, unsweetened coconut for rolling


  1. Add all the ingredients except the dates and coconut to a food processor and pulse until a coarse meal forms. Add the dates and continue to process until a moist dough forms. If it’s too wet add almond meal. If it’s too dry add a touch of the reserved soaking water.

  2. Shape into 12-16 balls and roll each ball in shredded coconut.
