Basil Pepita Pesto




2 cups washed, loosely packed fresh basil (stems removed)

1/2 cup pepitas (pumpkin seeds), toasted***

¼ cup grated parmesan cheese

1 clove garlic, chopped

¼ teaspoon sea salt

¼ teaspoon ground pepper

1 tablespoon fresh lemon juice

¼ cup extra virgin olive oil, plus more if needed



1. Place basil, pepitas, parmesan cheese, garlic, salt, pepper, and lemon juice in food processor. Pulse until coarsely ground. Slowly pour in the olive oil until smooth, adding additional oil if needed.

*** Toast the pepitas by baking them in a 350F oven for 7-10 minutes. They will start to make little popping noises when done.
