Asian Fish Burgers with Creamy Almond Butter Sauce
Makes 6 burgers
Creamy Almond Butter Sauce
½ cup almond butter
½ cup full fat coconut milk
2 tablespoons rice vinegar
3 tablespoons soy sauce or tamari
2 tablespoons toasted sesame oil
1 tablespoon maple syrup
1 inch piece ginger, roughly chopped
1 clove garlic, roughly chopped
¼ teaspoon sea salt
Burgers
1 cup chopped zucchini
½ cup chopped scallion
1 clove crushed garlic
1 teaspoon salt
1 tablespoon tamari
1-inch piece ginger, peeled and grated
1 ½ pounds salmon, bones and skin removed, meat cut into ½ inch cubes
Zest and juice of 1 lime
3 tablespoons bread crumbs or 2 tablespoons coconut flour
Olive oil for cooking burgers
1. Combine all sauce ingredients in a blender. Blend until smooth. Adjust seasoning if needed to taste.
2. Combine zucchini, scallion, garlic, salt, tamari, and ginger in food processor and process until finely ground. Add salmon, lime juice, lime zest, and coconut flour and pulse until salmon is incorporated, but not fully ground. It should be slightly chunky, but able to form patties. Form 6 large burgers or 12 sliders.
3. Heat oil in a cast iron skillet and cook burgers 3-4 minutes each side for larger patties or 2-3 minutes for sliders, until fish is fully cooked through.
