Turkey Stuffed Bell Peppers
Makes 4 servings
4 red bell peppers
2 tablespoons olive oil plus more for oiling bell peppers
1 yellow onion, diced small
Salt
3 cloves garlic, minced
1 pound ground turkey
1 tablespoon ground cumin
1 teaspoon chili powder
½ teaspoon smoked paprika
1 (14 ounce) can diced tomatoes
2 cups cooked brown rice
1 cup black beans, drained and rinsed
½ cup chopped cilantro
1. Preheat oven to 350.
2. Halve the bell peppers lengthwise and remove the stems, ribs, and seeds.
3. Heat olive oil in a skillet over medium heat. Add the onion and a pinch of salt and cook 4 minutes. Add the garlic and cook another 30 seconds. Add the turkey, cumin, chili, smoked paprika, and ¾ teaspoon salt. Cook 5 minutes, until turkey is evenly browned.
4. Stir in tomatoes, brown rice, black beans, and cilantro. Remove from heat.
5. Arrange bell peppers in a deep baking dish and coat lightly in olive oil. Spoon turkey filling evenly into each bell pepper half. Transfer to oven and bake 20 minutes.
