Stewed Black Beans

Makes 6-8 servings

1 lb black beans, rinsed and soaked overnight

1 piece kombu

1 bay leaf

1 tablespoon dried oregano

1 tablespoon + 1 teaspoon ground cumin

1 tablespoon + 1 teaspoon ground coriander

1 ½ teaspoons ground cinnamon

1/8 teaspoon cayenne pepper (optional)

½ teaspoon salt


1. Drain black beans in a mesh strainer and rinse. Transfer to a large pot. Add 8 cups water, kombu, bay leaf, oregano, cumin, coriander, cinnamon, and cayenne pepper. Do not add salt.

2. Bring to a boil, reduce to a simmer and cook uncovered 1 – 1 ½ hours, until beans are very tender. Stir in salt and taste, adjusting seasoning if desired.
