Surprise Brownies
Makes 12 servings
1 14-oz can black beans, drained and rinsed
3 tablespoons cocoa powder
½ cup quick oats
¼ teaspoon salt
½ cup pure maple syrup
¼ cup melted coconut oil
2 teaspoons vanilla extract
½ teaspoon baking powder
½ cup chocolate chips
1. Preheat oven to 350°F. Grease a 9x9 inch baking pan and set aside.
2. Combine all ingredients except the chocolate chips in a food processor and blend until completely smooth. You’ll want to blend at least 2 minutes to make sure all ingredients are totally pureed. Add the chips and pulse a few times to combine.
3. Pour into greased pan and bake for 25-30 minutes, until brownies spring back when touched. Cool at least 10 minutes before slicing.
