Garlicky Greens


Garlicky Greens

Makes 4 servings

2 tablespoons olive oil

3 cloves garlic, minced

Pinch red pepper flakes

2 bunches greens (kale, Swiss chard, spinach, dandelion greens, etc), de-stemmed and cut into bite-size pieces

¼ teaspoon salt

Lemon juice to taste

1. Heat olive oil over medium heat in a large sauté pan. Add the garlic and red pepper flakes and cook 30 seconds. Add the greens, salt and 2-3 tablespoons water. Cover and cook 2 minutes. Stir and cook another minute or two, until greens are fully wilted and tender.

2. Add a pinch of salt if needed and lemon juice to taste before serving.
