Garlicky Broccoli Rabe
Makes 4 servings
2 bunches broccoli rabe or broccolini
1 tablespoon olive oil
2 cloves garlic, minced
Pinch red pepper flakes
Sea salt
Lemon juice
1. Fill a large pot with water and bring to a boil.
2. Trim the bottom inch off of the broccoli rabe. When water is boiling, drop broccoli rabe into the pot and cook until bright green and just crisp tender, about 1 minute.
3. Drain and rinse under cold water to stop the broccoli rabe from cooking. Remove as much as water as possible.
4. Heat oil in a large sauté pan. Add garlic and cook 30 seconds, stirring continuously. Add red pepper flakes, broccoli rabe and a pinch of sea salt. Cook for 2-4 minutes, until broccoli is fully tender. Spritz with lemon juice.
