Dulse and Black Sesame Gomasio
Makes 1 1/2 cups
1 ounce dried dulse seaweed
1 cup black sesame seeds
Preheat oven to 275F. Place dulse on a baking sheet and toast until crispy. Dulse should flake when crunched (about 8-10 minutes, but watch carefully because it can easily burn).
Place sesame seeds in a 10 or 12-inch skillet and toast until fragrant.
Place crisp dulse in a food processor and process into a powder*. Transfer to a bowl.
Place sesame seeds in food processor and process to crush the sesame seeds*. Do not over process. Sesame seeds should be broken up into smaller bits and pieces, but not completely powdered. (A paste will form if you over process).
Combine crushed sesame seeds and powdered dulse in a bowl and stir to distribute evenly. Transfer to a air-tight container and sprinkle on foods as desired.
*Alternatively, you can do this the old-fashioned way in with a mortar and pestle. You'll need to work in batches.
