Beet Hummus


Beet Hummus

Makes 6 servings

1 medium roasted beet, peeled and quartered (Trader Joes sells roasted beets in the produce department)

1 14-ounce can chickpeas, drained and rinsed

Zest and juice from one lemon

1 clove garlic, roughly chopped

¼ cup tahini

¼ cup extra virgin olive oil

½ teaspoon ground cumin

½ teaspoon ground coriander

¼ teaspoon salt

1/8 teaspoon ground black pepper

1. Combine all of the ingredients in a food processor and process until smooth. Taste and adjust lemon and salt if needed.
