Apple and Pear Crumble

Makes 8 servings

Apple filling

2 large baking apples, peeled, cored, and cut into 1’’ pieces

2 pears, peeled, cored, and cut into into 1’’ pieces

2 tablespoons maple syrup

1 tablespoon lemon juice

2 tablespoons aarowroot starch

1 teaspoon ground cinnamon

½ teaspoon ground allspice

Pinch salt

Oat, almond meal, walnut topping

1 cup rolled oats

½ cup almond meal

½ cup walnuts, chopped

¼ teaspoon sea salt

¼ cup maple syrup

¼ cup coconut oil, warmed slightly

¼ cup applesauce

1. Preheat oven to 350F.

2. In a 9x9-inch square baking dish, mix together the apples, pears, maple syrup, lemon juice, aarowroot starch, cinnamon, allspice, and salt.

3. In a medium mixing bowl, stir together the oats, almond meal, walnuts, and salt. Mix in the maple syrup, coconut oil, and applesauce. Stir oats and almond meal are evenly moistened.

4. Crumble the oat topping over the apple pear filling.

5. Bake for 45-50 minutes, or until the filling is bubbling around the edges and the top is golden. Let cook 5 to 10 minutes before serving.
