Sautéed Green Beans
Makes 4 servings
1 pound haricots verts or green beans, trimmed
1 clove garlic, minced
Small pinch crushed red pepper flakes
Freshly squeezed lemon juice
1. Heat a 12-inch skillet over medium heat. Add one tablespoon olive oil.
2. Add half the beans and a pinch of salt. Cook two minutes without stirring. Stir and cook another two minutes. Add one tablespoon water and cover to steam until tender. Remove from pan and repeat with second half of green beans
3. Add another teaspoon of olive oil along with the garlic and chili flakes. Cook 30 seconds.
4. Add green beans back into pan and toss with garlic and chili. Stir in a squeeze of lemon juice and season with additional salt if needed.
