Roasted Sweet Potatoes

Roasted Sweet Potatoes

Makes 4-6 servings

3 very large or 5 small/medium sweet potatoes (can be a mixture of types, for example Japanese sweet potatoes, garnet yams, etc), cut into 1-inch cubes

Olive oil


1. Preheat oven to 425F.

2. In a large bowl, toss sweet potatoes with olive oil (enough to coat well) and salt (a few generous pinches).

3. Spread sweet potatoes onto 2 parchment-lined baking sheets and roast 30-40 minutes, turning once halfway through cooking.
