Roasted Broccoli with Basil and Lemon Zest

Makes 4 servings

2 ½ pounds broccoli, cut into florets

½ teaspoon salt

3 tablespoons olive oil

Zest of 1 lemon

2 tablespoons freshly squeezed lemon juice

½ cup fresh basil leaves, chopped

½ cup toasted slivered almonds

1. Preheat oven to 425F.

2. Line a baking sheet with parchment paper. Place broccoli on sheet. Sprinkle with salt and drizzle with olive oil. Use hands to mix thoroughly so broccoli is evenly coated.

3. Roast 20-25 minutes, until broccoli begins to brown and is tender. Remove from oven and toss with lemon zest, juice, and basil. Serve topped with slivered almonds.
