
Quinoa with Mushrooms and Peas
Makes 4 servings
1 cup quinoa, rinsed well and drained
Sea salt
Extra virgin olive oil
1 yellow onion, diced
2 cloves garlic, minced
8 ounces cremini mushrooms, sliced
1 cup English peas, fresh or frozen
½ cup chopped parsley leaves
Ground black pepper
1. In a small pot, combine quinoa, ¼ teaspoon salt, and 1 ¾ cup water. Bring to a boil, reduce to a simmer, and cook for 15 minutes.
2. Heat 1 tablespoon olive oil in a sauté pan. Cook onions, along with a pinch of salt, until translucent. Then add the garlic and cremini mushrooms, along with another pinch of salt, until mushrooms are soft, about 3 minutes. Add the peas and sauté until tender, another 1-2 minutes.
3. Gently stir mushrooms and peas, along with the chopped parsley, into the cooked quinoa. Season with salt and pepper to taste
