Mango Guacamole
Makes 4-6 servings
3 ripe avocados
½ small red onion, finely dices
1 small tomatoes, diced
1/3 cup fresh cilantro leaves, chopped
2 cloves garlic, minced or pressed
1 tablespoon lime juice
½ teaspoon sea salt
½ teaspoon ground cumin
1 small ripe mango, peeled and diced small
1. Pit avocados and place flesh in a medium-sized bowl. Using a potato masher or the back of fork, mash avocados. Guacamole can be completely smooth or chunky depending on preference. Stir in the remaining ingredients.
2. Taste and adjust lime and salt as needed.
