Garlicky Sautéed Mixed Greens
Makes 4 servings
2 tablespoons olive oil
2 cloves garlic, minced
2-3 bunches dark leafy greens (kale, collards, chard, dandelion, spinach), destemmed, chopped, rinsed, and spun dry
Sea salt
1. Heat olive oil in a large pot over medium heat. Add garlic and cook 20 seconds. Add greens along with a big pinch of salt.
2. Cover lid and cook until greens are wilted and tender, 3-5 minutes. Taste and adjust seasoning as needed.
