
Baked Parsnip “Fries”
Makes 4-6 servings
2 pounds parsnips, optionally peeled and cut into long strips
Olive oil
Salt
1. Preheat oven to 425F.
2. Place parsnips on a parchment-lined baking sheet and toss with oil and salt. Bake 20 minutes (flipping half way).
